Thai Chicken Wings

These chicken wings are a unique and delicious appetizer that will impress your friends and relatives. They are a nice treat because they are different and unexpected. The recipe is divided into three parts, marinade, basting sauce, and dipping sauce. You’ll start with three pounds of chicken wings.

For the marinade you will need:

  • 1/4 cup chopped garlic
  • 1 tablespoon chopped cilantro
  • 1 teaspoon ground turmeric
  • 1 teaspoon curry powder
  • 1 1/2 teaspoons ground dried chilies, cayenne pepper will work too.
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 3 tablespoons thai fish sauce

For the basting sauce you will use 1/2 cup coconut milk.

 

For the dipping sauce you’ll need:

  • 1/2 teaspoon dried chili flakes — OR- cayenne
  • 2 chopped garlic cloves
  • 1 tablespoon brown sugar
  • 1/4 teaspoon salt
  • 1/2 cup chinese red rice vinegar
  • 1 thinly sliced green onion
  • 1 tablespoon ccoarsely chopped cilantro

The marinade is a breeze to make. Simply use a blender to blend together all of the ingredients, in no particular order. Then, marinate the chicken in the refrigerator overnight.

 

You will grill the wings over hot coals until it is done, often brushing them with coconut milk. You can also bake the chicken wings in the oven at 350 degrees, but remember to flip them and brush them often with coconut milk.

 

 

To make the dipping sauce mash together the first four ingredients until they turn into a paste. Next, add the vinegar and mix. You can also use a blender to mix these ingredients. Finally, drop in the onions and cilantro, but just let them float on top, don’t blend them.

 

Serve these chicken wings garnished with cilantro sprigs. They go very well with steamed rice.
